The best cheese in Central Texas starts with milk from 72 Dripping Springs goats.
Dripping Springs is home to some of the best goat cheese in America, according to the American Cheese Society's annual conference, where Pure Luck Farm and Dairy took home a blue ribbon earlier this month.
Pure Luck Dairy's owner and cheese maker Amelia Sweethardt said the shop produces 600 pounds of cheese every week.

"This is the one place in my life that things have order," Sweethardt said. "Everything has a spot, the way that it should be."
The goats are milked, the product strained, pasteurized and coagulated and salted.
"It's something you learn over time, is how to get the right amount of salt on the cheese," Sweethardt said.
